下午行程來到天芳茶行體驗採茶、品茶

天芳茶行距離三峽老街較偏遠,但它位在成福路大馬路旁,很容易找到
品走在這小徑中剎那誤以為來到南部鄉下,很難想像我們正身處新北市呢!

茶行茶園總面積約200公頃,主要製茶種類為綠茶(龍井茶及碧螺春)、包種茶及烏龍茶等
茶園小徑為泥土路,如果又遇到下雨天它就會變成泥濘路並不好走,採茶這工作好辛苦

綠油油一片茶園現場看好美、好壯觀,原來不用辛苦跑外縣市就能享受到這景色
三峽特有品種「青心柑仔」手採一心二葉嫩芽後直接殺菁揉捻而成
最佳製作時期為3~5月、10~12月,年產量約200公噸

碧螺春名稱解釋:碧就是外觀碧綠清澈就像翡翠顏色一樣翠綠
螺就是茶芽外形似田螺微小般彎曲起來的狀況,這種茶有白毫覆蓋在上面
它在春初或春天所摘幼嫩帶心芽的茶菁,經加工製成的茶
若是要製成紅茶的葉片需越細越小越好,一心二葉模樣如下圖 ↓

製茶廠一律採機械化操作,黃老闆正為我們解說茶採收下來後如何製茶到封包 ↓
這是從茶園剛採收回來的茶葉 ↓
第一步得先將茶葉殺菁,黃老闆說以前的人沒有溫度計都是直接用手試溫度、火候
以高溫殺菁可使酵素不易作用,凍化、加工、儲藏過程,也可以保持更久並防止葉綠素流失
溫度試好後,則手工將一片片茶葉全部放入機器內 ↓
炒茶機經過翻滾攪拌後,會將炒好的茶菁倒出此時己完成殺菁過程 ↓

第二步準備將炒菁後的茶葉置入揉捻機內,機器反覆滾動並形成捲曲狀
逼迫稍許汁液滲出粘附於表面,之後沖泡時可使茶素較容易溶解於熱水中以加強茶湯滋味 ↓

第三步是把捻好的茶葉切斷、分離 ↓
茶葉帶著溼氣,摸起來會有黏膩感 ↓

第四步烘焙,將茶葉倒入乾燥機烘,這樣也可減少以往繁複人力 ↓
茶若要好喝烘焙時間溫度可要拿捏好,這也正考驗各家茶行功力
大約等待10~15分鐘茶葉就大功告成 ↓
